Authentic Jamaican Ackee & Saltfish Recipe
Ingredients
- ½ lb dried saltfish (cod)
- 1 dozen fresh ackees
- 1 medium red onion, thinly sliced
- Black pepper, to taste
- Optional: Fresh herbs and ripe tomatoes for garnish
Cooking Directions
- 1. Soak the saltfish in cold water overnight to remove excess salt.
- 2. Rinse and boil the saltfish in fresh water until tender, ensuring a balanced flavor.
- 3. In a separate pot, bring 3 cups of water to a boil; gently add the ackees and cook until just tender. Drain carefully.
- 4. Debone and flake the saltfish into bite-sized pieces.
- 5. Heat a small amount of oil in a frying pan over medium heat.
- 6. Sauté the sliced onion until soft and translucent, then add the flaked saltfish and tender ackees with a sprinkle of black pepper.
- 7. Cook for 2 to 5 minutes, stirring gently to meld the flavors. Adjust seasoning as needed.
- 8. Serve warm and savor the authentic taste of Jamaica.
