Jamaican Roast Fish

Roast Fish is a popular Jamaican dish where fresh fish is seasoned with herbs and Scotch bonnet pepper, wrapped in foil, and roasted on a grill or in the oven.
Ingredients
- 2 lb fresh fish
- 1 tsp paprika
- 1 Scotch bonnet pepper
- 3 tsp butter
- 1 small onion
- 1 sprig thyme
- 3 stalks scallions
- Salt and pepper to taste
Directions
- Clean fish with lime and hot water, then pat dry.
- Season fish with paprika, salt, and pepper. Add butter, onion, thyme, scallion, and Scotch bonnet.
- Wrap fish in foil.
- Grill or bake at 350°F (175°C) for 30–45 minutes until cooked through.
