Jamaican Christmas Cake (Fruit Cake / Rum Cake)

The Jamaican Christmas Cake, also known as Fruit Cake or Rum Cake, is a rich dessert baked during the festive season. It combines butter, sugar, eggs, and flour with mixed dried fruits soaked in rum.

Ingredients

  • 1 lb butter or margarine, softened
  • 1 lb dark brown sugar
  • 12 eggs
  • 1 lb flour
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 2 tsp baking soda
  • Cinnamon and nutmeg, to taste
  • 1/3 cup rum
  • 2 cups mixed fruit (diced)
  • 1 lb prunes
  • 1 lb raisins
  • 1 lb currants
  • 1 lb cherries

Directions

  1. Cream the butter and sugar until pale yellow.
  2. Add eggs gradually and stir in vanilla extract.
  3. Sift flour, baking powder, baking soda, cinnamon, and nutmeg. Fold into mixture.
  4. Add fruits, prunes, raisins, currants, and cherries. Mix well.
  5. Pour into greased cake tins. Drizzle rum on top.
  6. Bake at 350°F (175°C) until a toothpick comes out clean. Cool before serving.

Tips and Serving

Traditionally soaked with rum or wine before baking. Serve as a centerpiece dessert during Christmas celebrations.
