Tamarind Drink

Ingredients
- 1 quart ripe, unshelled tamarind
- 1 quart cold water
- 2 teaspoons lime juice
- 1/2 teaspoon grated fresh ginger root
- 1/2 cup brown sugar
Directions
- Shell the tamarind and remove any veins. Soak in 1 quart of cold water until softened.
- Rub the soaked tamarind through a sieve to extract the pulp with the soaking water.
- Add lime juice, grated ginger, and brown sugar. Stir well and strain.
- Chill before serving. For a bubbly twist, add 1/4 teaspoon bicarbonate of soda before serving.
