Tamarind Drink

Ingredients

  • 1 quart ripe, unshelled tamarind
  • 1 quart cold water
  • 2 teaspoons lime juice
  • 1/2 teaspoon grated fresh ginger root
  • 1/2 cup brown sugar

Directions

  1. Shell the tamarind and remove any veins. Soak in 1 quart of cold water until softened.
  2. Rub the soaked tamarind through a sieve to extract the pulp with the soaking water.
  3. Add lime juice, grated ginger, and brown sugar. Stir well and strain.
  4. Chill before serving. For a bubbly twist, add 1/4 teaspoon bicarbonate of soda before serving.

Tips and Tricks

For stronger flavor, soak the tamarind overnight before straining.

Add a touch of honey or more lime juice depending on taste.
