Jamaican Sweet Potato Pudding

Sweet Potato Pudding is one of Jamaica’s most beloved desserts. It’s made with grated sweet potatoes, coconut milk, raisins, nutmeg, and spices, baked until rich and moist. Known as “Hell a top, Hell a bottom, and Hallelujah in the middle,” it’s a true Jamaican classic.

Ingredients

  • 2 lbs sweet potatoes, grated
  • 1 1/2 cups dark brown sugar
  • 1 cup flour
  • 2 cups coconut milk
  • 1 1/2 cups raisins
  • 2 tsp vanilla
  • 1 1/2 tsp grated nutmeg
  • 1 tsp mixed spice
  • 1 tsp salt
  • 1 tsp margarine or oil

Directions

  1. Wash, peel, and grate sweet potatoes.
  2. Mix flour, spice, salt, and nutmeg in a bowl.
  3. Combine grated potatoes with dry mixture.
  4. Stir in sugar, coconut milk, raisins, and vanilla. Mix well.
  5. Grease pan and pour in mixture.
  6. Bake at 350°F (175°C) for 40–60 minutes until cooked through.

Tips and Serving

Best enjoyed warm or cold. For an authentic experience, bake using coal fire above and below the pan—the traditional “hell a top, hell a bottom” method.
