Jamaican Stew Oxtail

Ingredients
- 3 lb oxtail, trimmed
- 1 onion, sliced
- 1 green pepper, chopped
- 1 tomato, chopped
- 1 scotch bonnet pepper, chopped
- 3 garlic cloves, minced
- 1 sprig thyme
- 6 cups hot water
- Salt and black pepper to taste
Directions
- Wash and clean the oxtail thoroughly.
- Season with salt, black pepper, and garlic.
- Brown the oxtail in a large pot with a little oil, then drain excess oil.
- Add 4 cups hot water, bring to a boil.
- Add thyme, onions, tomato, and green pepper; simmer 2–3 hours until tender.
- Optional: Add beans or dumplings in the last 30 minutes.
- Adjust seasoning as needed; serve hot.
