Jamaican Steamed Fish

Steamed Fish is a healthy Jamaican dish made by steaming snapper or other fish with onion, scallion, thyme, tomato, and Scotch bonnet pepper. The fish is tender, flavorful, and cooked in a light, aromatic sauce.
Ingredients
- 2 lbs fish (snapper or other firm fish)
- 2 oz butter (optional)
- 1 small onion
- 2 medium tomatoes
- 2 stalks scallion
- 2 sprigs thyme
- 1 Scotch bonnet pepper (optional)
- 2 tbsp ketchup (optional)
- 5 crushed pimento seeds (optional)
- Salt and pepper to taste
- 5 tbsp cooking oil
- 1/2 cup water
- Okra (optional)
Directions
- Clean the fish and season with salt and pepper.
- Sauté onion, scallion, thyme, pimento, and tomatoes in oil for 5 minutes.
- Add water and place fish on vegetables. Add okra if using. Cover and steam 10 minutes.
- Add ketchup and butter, cover, and steam 7–10 minutes more until fish is tender.
