Jamaica Mannish Water

Ingredients

  • 1 goat head (cleaned and chopped)
  • 2 green bananas (peeled and sliced)
  • 1 chocho (chayote), diced
  • 1 yam, cubed
  • 1 scotch bonnet pepper (whole)
  • 2 stalks scallion
  • 2 sprigs thyme
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Water to cover

Directions

  1. Clean and wash goat head pieces thoroughly with vinegar and water.
  2. Place goat head in a large pot, cover with water, and bring to a boil.
  3. Reduce heat and simmer for 1.5 to 2 hours until meat is tender.
  4. Add yam, green bananas, chocho, onion, garlic, thyme, scallion, salt, and pepper.
  5. Simmer until vegetables are soft, about 30 minutes.
  6. Add the scotch bonnet pepper whole near the end and simmer without bursting it.
  7. Remove from heat and serve hot.

Tips and Tricks

Use vinegar and lime to clean the goat head thoroughly before cooking.

Do not burst the scotch bonnet pepper unless you want extra heat.

Some versions include dumplings or pimento berries for extra flavor.
