Jamaica Mannish Water

Ingredients
- 1 goat head (cleaned and chopped)
- 2 green bananas (peeled and sliced)
- 1 chocho (chayote), diced
- 1 yam, cubed
- 1 scotch bonnet pepper (whole)
- 2 stalks scallion
- 2 sprigs thyme
- 2 cloves garlic, crushed
- 1 onion, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- Water to cover
Directions
- Clean and wash goat head pieces thoroughly with vinegar and water.
- Place goat head in a large pot, cover with water, and bring to a boil.
- Reduce heat and simmer for 1.5 to 2 hours until meat is tender.
- Add yam, green bananas, chocho, onion, garlic, thyme, scallion, salt, and pepper.
- Simmer until vegetables are soft, about 30 minutes.
- Add the scotch bonnet pepper whole near the end and simmer without bursting it.
- Remove from heat and serve hot.
