Jamaican Mackerel Rundown

Mackerel Rundown is a traditional Jamaican dish where salted mackerel is simmered in coconut milk with onion, scallion, tomato, thyme, and Scotch bonnet. The coconut reduces into a rich sauce that coats the fish.
Ingredients
- 2 lbs salted (pickled) mackerel
- 2 cups coconut milk
- 1 cup water
- 1 large onion, finely chopped
- 2 stalks scallion, chopped
- 2 large tomatoes, chopped
- 2 sprigs thyme
- 1 small Scotch bonnet pepper
- Black pepper, to taste
Directions
- Soak mackerel overnight or boil for 20 minutes to remove salt.
- Drain and cut into small pieces.
- Boil coconut milk and water until oily.
- Add mackerel, cover, and cook 10–12 minutes.
- Add onion, scallion, tomatoes, Scotch bonnet, and thyme.
- Season with black pepper and simmer 10–15 minutes.
