Authentic Jamaican Easter Bun Recipe

Ingredients
- 1½ oz margarine
- ¾ cup brown sugar
- 2 tbsp honey
- ½ cup stout
- 1½ cups flour
- 1½ tbsp baking powder
- ½ tsp mixed spice
- ½ tbsp cinnamon powder
- 1 egg
- 4 tbsp raisins
- 4 tbsp currants
- 2 tbsp finely chopped mixed peel
Directions
- Melt margarine, brown sugar, honey, and stout in a saucepan over low heat. Allow to cool slightly.
- Sift flour, baking powder, and spices in a large bowl.
- Add melted mixture and egg to dry ingredients. Stir until combined.
- Mix in raisins, currants, and chopped mixed peel.
- Preheat oven to 350°F (175°C). Grease a 9x4 inch loaf tin.
- Pour batter into prepared tin and bake on center shelf for 45 minutes.
- Cool in tin for a few minutes before transferring to a wire rack. Slice and enjoy.
