Jamaican Cow Foot

Cow Foot is a rich Jamaican stew prepared with slow-cooked cow foot, butter beans, and traditional seasonings like pimento, thyme, and Scotch bonnet pepper.

Ingredients

  • 2 lbs cow foot
  • 1 can butter beans
  • 2 garlic cloves, crushed
  • 8 pimentos
  • 2 sprigs thyme
  • 2 onions, chopped
  • 1 whole Scotch bonnet pepper
  • Salt and black pepper, to taste
  • 3 cups water

Directions

  1. Season the cow foot with pimento, onions, garlic, salt, and black pepper.
  2. In a large pot, cook cow foot in 3 cups of water until tender (about 2 hours).
  3. Add butter beans, thyme, and adjust seasoning. Cook for 20 more minutes.
  4. Place a whole Scotch bonnet pepper into the stew for extra flavor before serving.

Tips and Serving

Serve cow foot stew hot with rice and peas, boiled yam, or dumplings. The longer it simmers, the richer the gravy becomes.
