Jamaican Brown Stew Chicken

A classic Jamaican dish where chicken is fried until golden, then simmered in a rich gravy with onion, scallion, and sweet pepper until tender and flavorful.
Ingredients
- 2 lbs chicken, cut into pieces
- 3 Tbsp soft margarine
- 1/2 cup vegetable oil
- 1 tsp salt
- 1/2 cup chopped onion
- 2 stalks scallion, chopped
- 1 sweet pepper, sliced
Directions
- Clean and dry the chicken pieces thoroughly.
- In a heavy pot, heat the oil and margarine, then fry the chicken until well browned on all sides.
- Add salt, onion, scallions, and sweet pepper. Pour in enough water to cover the chicken.
- Cover and simmer slowly until chicken is tender and gravy thickens.
