Hearty Jamaican Beef Soup Recipe

Ingredients
- 1 1/2 lb beef shank, cut into chunks
- 1/3 lb carrots, chopped
- 1/3 lb cho cho (chayote), peeled and cubed (optional)
- 1 lb yellow yam, sliced (optional)
- 1 lb coco, peeled and cubed (optional)
- 1 lb Irish potatoes, diced
- 1/2 lb pumpkin, cubed
- 1 package beef noodles
- 1 tsp salt, or to taste
- 2 stalks scallion, chopped
- Flour for dumplings (optional)
Directions
- Begin by boiling the beef shank in a large pot of water until the meat is tender.
- Add the chopped carrots, cho cho, pumpkin, and Irish potatoes and continue boiling for 10–20 minutes until the vegetables soften.
- Stir in the slices of yellow yam and adjust the seasoning as needed.
- If desired, gently drop in dumplings made with flour.
- Allow the soup to simmer until it reaches a rich, medium-bodied consistency.
