Traditional Jamaican Bammy

Bammy is a traditional Jamaican flatbread made from cassava. After being pressed and cooked, it is soaked in coconut milk and finished by frying or grilling until golden.

Ingredients

  • 1 lb grated cassava
  • Salt, to taste
  • Coconut milk, for soaking

Directions

  1. Place grated cassava in a muslin cloth and squeeze out the excess liquid.
  2. Add salt and mix well.
  3. Press about one cup of the mixture into a lightly greased small frying pan.
  4. Cook over moderate heat, turning once edges pull away, about 10 minutes per side.
  5. Soak cooked bammy in coconut milk for 5–10 minutes.
  6. Finish by frying or grilling until golden brown.

Tips and Serving

Bammy pairs perfectly with fried fish, escoveitched fish, or stews. For a softer texture, soak longer in coconut milk before the final step.
