Traditional Jamaican Bammy

Bammy is a traditional Jamaican flatbread made from cassava. After being pressed and cooked, it is soaked in coconut milk and finished by frying or grilling until golden.
Ingredients
- 1 lb grated cassava
- Salt, to taste
- Coconut milk, for soaking
Directions
- Place grated cassava in a muslin cloth and squeeze out the excess liquid.
- Add salt and mix well.
- Press about one cup of the mixture into a lightly greased small frying pan.
- Cook over moderate heat, turning once edges pull away, about 10 minutes per side.
- Soak cooked bammy in coconut milk for 5–10 minutes.
- Finish by frying or grilling until golden brown.
