Irish Moss Jamaican Style

Ingredients
- 1/2 lb fresh or 2 oz dried Irish moss
- 1 tablespoon Jamaican white rum
- 1 cup milk and 10 cups water
- 1/2 teaspoon grated nutmeg
- Sugar to taste
- Optional: Strawberry syrup
Directions
- If using dried Irish moss, soak it in water for a few hours. If using fresh moss, clean thoroughly.
- Simmer the moss in water until tender. Top up the water and bring to a boil.
- Strain the liquid through muslin cloth or fine sieve to remove solids. Add sugar to taste.
- Stir in milk and nutmeg. Optionally, add strawberry syrup for pink color.
- Pour into a glass bowl and refrigerate until set. Alternatively, serve in liquid form as a drink.
