Irish Moss Jamaican Style

Ingredients

  • 1/2 lb fresh or 2 oz dried Irish moss
  • 1 tablespoon Jamaican white rum
  • 1 cup milk and 10 cups water
  • 1/2 teaspoon grated nutmeg
  • Sugar to taste
  • Optional: Strawberry syrup

 

Directions

  1. If using dried Irish moss, soak it in water for a few hours. If using fresh moss, clean thoroughly.
  2. Simmer the moss in water until tender. Top up the water and bring to a boil.
  3. Strain the liquid through muslin cloth or fine sieve to remove solids. Add sugar to taste.
  4. Stir in milk and nutmeg. Optionally, add strawberry syrup for pink color.
  5. Pour into a glass bowl and refrigerate until set. Alternatively, serve in liquid form as a drink.

Tips and Tricks

For a smoother jelly, strain multiple times through fine muslin cloth.

To enjoy as a drink, blend with extra milk and serve chilled over ice.
