Gungo Peas (Pigeon Peas) Soup

Ingredients
- 1 lb salted pig tail
- 1 lb stewing beef, cubed
- 2 cups gungo peas (green or dried)
- 4 qt water
- 4 small potatoes, peeled and cubed
- 1 sprig fresh thyme
- Hot pepper, to taste
- Optional: Yam, peeled and cubed
- Optional: Dumplings
- Salt, to taste
Directions
- Combine salted pig tail, stewing beef, and gungo peas in a large pot. Cover with boiling water.
- Simmer 60 to 90 minutes until peas are tender and beginning to split.
- Add potatoes, thyme, and hot pepper. If using, add yam and dumplings now.
- Season with salt and additional pepper as desired.
- Simmer 45 to 60 minutes more, stirring occasionally, until rich and hearty.
