Hearty Jamaica Chicken Soup

Ingredients

  • 2 lbs chicken
  • 2 lbs yam (optional)
  • 1 lb pumpkin
  • 1/2 green breadfruit (optional)
  • 1 lb dasheen (optional)
  • 1 small cho cho (chayote), chopped (optional)
  • 2 medium carrots, chopped
  • 1 stalk scallion, chopped
  • 2 sprigs thyme
  • 1 hot pepper (optional)
  • Salt, to taste
  • Dumplings (optional)

Directions

  1. Rinse chicken under cold water, pat dry, and place in a large pot.
  2. Cover with water and bring to a rolling boil.
  3. Add cho cho (if using), carrots, and pumpkin. Cook 30 minutes, adding water if needed.
  4. Add yam, dasheen, breadfruit, scallion, thyme, hot pepper, and other ingredients.
  5. Simmer another 30 minutes to blend flavors.

Serve: Remove from heat, ladle into bowls, and enjoy your hearty Jamaican chicken soup.

Tips and Tricks

Add dumplings for a filling meal.

Control heat with scotch bonnet or use less for mild flavor.
