Jamaican Callaloo and Saltfish

A beloved Jamaican breakfast, Callaloo and Saltfish pairs hearty greens with flaked cod for a simple but flavorful dish enjoyed across the island.
Ingredients
- 1 bunch fresh callaloo, chopped
- 3 cups water
- 1/4 to 1/2 lb saltfish (codfish), soaked and flaked
- 1 large onion, chopped
- 1 Scotch bonnet pepper, to taste
- 1/4 cup vegetable oil
- Salt and black pepper, to taste
Directions
- Soak or boil saltfish to remove excess salt, then flake into small pieces.
- Heat oil in a pot. Sauté onion and Scotch bonnet for 2–3 minutes.
- Add chopped callaloo with a splash of water. Cover and steam until tender.
- Mix in the flaked saltfish. Cook for 5–7 minutes, adjusting seasoning to taste.
