Jamaican Callaloo and Saltfish

A beloved Jamaican breakfast, Callaloo and Saltfish pairs hearty greens with flaked cod for a simple but flavorful dish enjoyed across the island.

Ingredients

  • 1 bunch fresh callaloo, chopped
  • 3 cups water
  • 1/4 to 1/2 lb saltfish (codfish), soaked and flaked
  • 1 large onion, chopped
  • 1 Scotch bonnet pepper, to taste
  • 1/4 cup vegetable oil
  • Salt and black pepper, to taste

Directions

  1. Soak or boil saltfish to remove excess salt, then flake into small pieces.
  2. Heat oil in a pot. Sauté onion and Scotch bonnet for 2–3 minutes.
  3. Add chopped callaloo with a splash of water. Cover and steam until tender.
  4. Mix in the flaked saltfish. Cook for 5–7 minutes, adjusting seasoning to taste.

Tips and Serving

Traditionally served with fried dumplings, boiled green banana, or yam. For lighter spice, use whole Scotch bonnet instead of slicing it.
