Jamaican Ackee and Saltfish

Ingredients
- ½ lb dried saltfish (cod)
- 1 dozen fresh ackees (or canned ackee)
- 1 medium onion, sliced
- 2 medium tomatoes, chopped
- 1 Scotch bonnet pepper, chopped (optional)
- Black pepper, to taste
- 2 tbsp vegetable oil
Directions
- Soak saltfish in cold water overnight.
- Boil saltfish until tender; drain and flake.
- Boil ackees gently until tender, then drain carefully.
- Heat oil, sauté onion, tomato, and pepper.
- Add saltfish and ackees, season with pepper, stir gently, and cook 2–5 minutes.
