Jamaican Ackee and Saltfish

Ingredients

  • ½ lb dried saltfish (cod)
  • 1 dozen fresh ackees (or canned ackee)
  • 1 medium onion, sliced
  • 2 medium tomatoes, chopped
  • 1 Scotch bonnet pepper, chopped (optional)
  • Black pepper, to taste
  • 2 tbsp vegetable oil

Directions

  1. Soak saltfish in cold water overnight.
  2. Boil saltfish until tender; drain and flake.
  3. Boil ackees gently until tender, then drain carefully.
  4. Heat oil, sauté onion, tomato, and pepper.
  5. Add saltfish and ackees, season with pepper, stir gently, and cook 2–5 minutes.

Tips and Serving

Serve with fried dumplings, boiled green banana, yam, or breadfruit for a full Jamaican breakfast or dinner.
