Rock Cake Recipe
Ingredients
- 8 oz sugar
- 4 oz butter
- 2 eggs
- 3 ½ cups flour
- ⅔ cup milk
- 2 cups grated coconut
- 1 ½ tsp baking powder
- 1 tsp vanilla extract
- 1 tsp almond extract
Cooking Directions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a large bowl, combine the sugar, flour, grated coconut, and baking powder.
- 3. Melt the butter and stir it into the dry ingredients.
- 4. In a separate bowl, beat the eggs and mix in the vanilla, almond extracts, and milk.
- 5. Add the wet ingredients to the dry ingredients and mix until fully combined.
- 6. Drop spoonfuls of the batter onto a greased baking sheet or pour into a greased loaf pan.
- 7. Bake for about 1¼ hours, or until golden brown and a toothpick inserted into the center comes out clean.
